🍴 Potato Salad Recipe
Ingredients:
4-5 medium potatoes (peeled or with skin, depending on preference)
Salt & pepper (to taste)
2-3 tablespoons of mayonnaise
½ cup plain yogurt (or sour cream)
1 tablespoon lemon juice or vinegar
1 teaspoon mustard (optional)
1 small onion, finely chopped
1 – 2 stalks celery or cucumber, chopped (optional for crunch)
Fresh herbs (parsley, chives)
Hard-boiled eggs (optional)
Method:
1. Wash and boil the potatoes in salted water until fork-tender. Drain and let cool slightly.
2. Cut into cubes or slices.
3. In a bowl, mix the mayo, yogurt (or sour cream), lemon juice/vinegar, mustard, salt, and pepper to create the dressing.
4. Add onion, celery/cucumber, and herbs. Mix gently.
5. If using, fold in chopped hard-boiled eggs.
6. Chill in the fridge for at least 1 hour for flavors to meld.
