BBQ Chicken Pasta Salad – 347cal/48g protein

    The chicken is just chicken breasts, sliced into about 1.5 inches thick strips. Seasoned well and air fried until just cooked. Chopped super tiny. Last time I posted a dish with chicken, many people argued with me about the calories, but I assure you this matches the package label (120cal per 112g) and the USDA database by grams 😭 Be gentle here.

    The dressing is fat free cottage cheese blended using an immersion blender with low-calorie barbecue sauce and half a ranch seasoning packet. Some water to thin it out as needed.

    The rest is just thrown in as is. Enjoy!

    Extremely interested in recreating this soon, as I have a box of low cal Pastabilities penne sitting in my pantry screaming at me to use it already 😆I’m so in love with these fiber pasta noodles, I can’t imagine how I ever got by without them

    Can you tell me about the dressing though? How’s the flavor of it? Is it smokey and sweet? Salty? I can’t imagine the flavor 🤔it’s just cottage cheese, bbq sauce, and ranch seasoning blended up? It looks so, so good but I’m finding it hard to imagine the base flavor going on. Is it a summery sort of pasta flavor you’d take to a potluck or not really?

    I made a crunch noodle salad with spaghetti, red cabbage, bell pepper, scallions, edamame, peanuts and this delicious trader Joe’s dressing. Carbe diem is my soulmate lol
