Let’s get cooking this week with this incredibly tasty creamy pesto chicken. If you like cheesy and nutty flavors, then this is the one for you. Drop on a high heat some chicken breast. Hit with a bit of salt and pepper and fry until golden brown before turning over to do the same with the other side. Remove them, turn down the heat and melt some butter in the same pan and fry up some minced garlic for about 30 seconds. Delaze everything with some chicken stock and let simmer for a few minutes until nicely reduced. Turn the heat way down low and add some milk, cream cheese, and once that’s fully melted, some pesto to turn this into a vibrant, tasty green sauce. You can make the pesto yourself, just us ready made, and finish with some grated parmesan to help thicken before bringing back the chicken and coating in all that greeny goodness. Serve that up with some rice or pasta, maybe a touch of lemon for a tasty weekn night treat.
