Tomato and Cucumber Snow Burrata Salad

Grating frozen tomatoes and cucumber over this salad has a magical effect. So refreshing! So summery!

1–2 ripe tomatoes (frozen solid overnight)
1 small cucumber (frozen overnight)
3 – 4 cups fresh arugula
1 or 2 balls of burrata
Fresh basil leaves
Extra virgin olive oil
White balsamic vinegar
Balsamic reduction or glaze
Flaky sea salt & black pepper

Freeze your tomato (and cucumber, if using) the night before.

In a serving bowl, toss arugula with olive oil, white balsamic vinegar and kosher salt.

Cut the burrata into equal portions and arrange over the arugula.

Using a microplane or fine grater, grate the frozen tomato and cucumber over the top, letting it fall like snow.

Drizzle generously with olive oil and balsamic glaze.

Finish with a sprinkle of flaky sea salt and cracked black pepper

Here is your new summer obsession. This tomato and cucumber bara salad is one of the best things I’ve eaten in a long time. Frozen tomatoes and cucumbers grated into snow. Light, icy, and full of garden flavors. Serve it over a bed of peppery arugula with a few torn basil leaves and let it melt slowly into the creamy cold bara. Drizzle with olive oil, a little balsamic reduction, and maybe a pinch of flaky sea salt. That’s it. Fresh, chill, and vibrant. This is what summer tastes like. Cool, juicy, and effortless. One bite and you will understand the hype.
