All of the recipes in this week’s forecast are inspired by classic Italian cooking and your favorite crime family dramas in partnership with Direct TV. I’m always watching something while I cook, especially since the My Entertainment Pack gives me access to more than 50 live channels and top streaming apps. It makes me want to cry. I’m going to start by caramelizing some onions. This is something that you can do in advance on the weekend and add to meals throughout the week because this antipasto pasta salad actually comes together pretty quickly. Otherwise, we just boil some orzo, chop up roasted red peppers, sundried tomatoes, and olives. Really great if you have some salami or soada, pushcuto, just some deli meats to chop up and add to this as well. We’ll toss everything together with pesto, some lemon zest, those caramelized onions, and at the end, you’re left with this beautiful pasta salad fit for television. It makes great leftovers. It’s delicious, satisfying. I think you’re going to like it.
