Stunning Mediterranean Chickpea Salad
1tsp Djon Mustard
Juice of one Lemon
1 Clove of Garlic (grated)
1tsp Aleppo Pepper
1tsp Sumac
Salt and fresh black pepper
60mls extra virgin olive oil
1 red onion (diced)
8-10 cherry tomatoes (diced)
1 roasted red pepper ( rough chop)
Handful of parsley and mint (chopped )
Season to taste

The weather’s beginning to brighten up again, and that means that I’m going to start craving some salads. Show you how to make a stunning Mediterranean chickpea salad that will knock your socks off. Let’s get cooking. So, let’s start with the dressing. First, we’re going to go in with some Dijon mustard. Give a lemon a roll. Cut it in half and get all that juice out. Grate one clove of garlic. And then go in with one teaspoon of Aleppo pepper and one teaspoon of sumac. Season with salt and freshly cracked black pepper. Add in about 60 ml of olive oil. And then whisk until your sauce is emulsified. And now we move on to the salad itself. We’re going to dice one red onion. Quarter a few cherry tomatoes. And now let’s talk roasted peppers. Now you can of course make the roasted red peppers yourself. I’m choosing however not to because I don’t have an open flame that I can cook with. And I think roasting them in the oven is handy, but it just doesn’t impart that same flavor. But it’s so easy to get roasted red peppers in jars nowadays. They’re quite cost effective and they’re actually really, really good. So, with that being said, slice up your roasted red peppers. And then we’re going to slice some herbs. It’s okay to leave some of the slightly smaller stalks. So, slice up a handful of fresh parsley and mint. And let’s start building our salad. To a bowl, add two tins of drained and rinsed chickpeas. Add everything else to the bowl. Give it a toss and then give it a taste. love chickpeas. This could very easily be eaten on its own. Make a brilliant lunch.
