All right. So, this is one of my favorite types of breads. It’s pronounced hoops, which is k h u ez, which in Arabic just means bread. It’s kind of a flat round discshaped bread. In the west, or in America, you’d call it a pa, but here in this Egyptian restaurant, they it’s a a little bit more soft, pillowy, lighter flavor. They bake on a traditional oven called a tandoor or a taboon. But here, um, they have a little metal spinning round deck on the bottom so that it cooks evenly. It gives it a nice smoky kind of charred flavor. As you can kind of see in the bread, it’s a light dough and the inside is just spongy, soft, really pillowy flavor that just comes out perfect. It’s great for dipping hummus, tahini, or just stuffing it with whatever types of meats or kebabs that you want. [Music] Just a blade. [Music] [Music]
