I have been so excited about making this post! I tried my best to do it as one post but with 18 courses and a 5 hour experience it just didn't seem right!
Iris was for a solid 2 weeks the greatest dining experience I had ever had (before Alchemist took its place). Ever since my wife and I saw the Alexander the Guest's episode highlighting it, we fell in love and became obsessed with wanting to go. Our whole trip to Norway was inspired in wanting to knock this one off the list.
I am delighted to report that it matched and exceeded our stupidly high expectations for it. We have always been drawn to dining experiences that are try to be more than just a fancy meal, so getting to eat on a floating art piece in the middle of a fjord, getting to take a boat on the coastline line and enjoy part of the meal at their farm before moving to the main attraction, and all the visuals they used to present their inspiration ticked all those boxes for us.
The food was incredible, there wasn't a single miss in the massive meal and more impressively and something it shared with Alchemist, was that we were never left feeling overally stuff at the end of the night, everything was perfectly portioned so you could enjoy every courses without worrying about how much food was left.
The staff were also a highlight, as they explained it its a unique setup they have, it's about 13 staff who do everything, the fella who drives the boat, might also be the person who came up with the juice pairing for a certain course, the person who greets you at the docks is also one of the chefs, they all contribute in multiple aspects of the dinner service and experience.
My only negative is that because it's a small space, sometimes you'll have waves where you and the tables around you are getting courses at the same time and so it can get rather loud as they all explain the course, it would be nice if they were able to better manage when courses are coming out so you don't have those bursts of chaotic noise, but this was really just a minor complaint.
A truly once in a life time experience that had me smiling ear to ear for the rest of the night.

Is the art installation floating or fixed in the fjord. Asking because wife is VERY prone to seasickness.
