A few tips I learned

  • with nigiri, the topping should completely cover the rice so none is visible from above (didn’t quite manage that!)
  • prawn tail facing south
  • line up the nigiri diagonally, and nestle them so the moisture is retained
  • nigiri should be plump and sloping, not flat

    Very good! I like how you portioned the toppings, the rice is perhaps a bit smashed? I can’t really tell.

    Much better than I could ever do. The only thing I’d say is that the cuts of tuna and salmon are little wide.

    Do they not start with how to make sushi rice? The word sushi literally means rice. I make some pretty good sushi rice but I’d love to learn from a pro. The rice can make or break the dish
