# Fig Balsamic Dressing with Tahini Lemon and Thyme
# Ingredients
* ½ cup dried black Mission figs (stems removed and cut in half) * ¾ cup water (more if needed) * 2 Tbsp balsamic vinegar * 3 Tbsp tahini * juice of ½ lemon (more if needed) * ¼ tsp dried mustard powder (or sub with 1/2 tsp Dijon mustard) * ¼ tsp garlic powder * ¼ tsp salt * 1 Tbsp fresh thyme leaves (or sub with 1 tsp dried thyme)
# Instructions
* Place all ingredients in the bowl of a high speed blender and process until smooth. * Taste and adjust for desired flavor and consistency. You can add more lemon juice or vinegar if you want your dressing to be tangier.* If you just want it to be less thick you can add more water a little at a time. Pulse before tasting again. * Serve as salad dressing, sandwich spread or glaze for grilled vegetables. * Store your dressing in the fridge in an airtight container for at least a week.
# Notes
*You can also add a little bit of another kind of vinegar. Apple cider vinegar, rice vinegar, champagne vinegar or white wine vinegar would all work well
