Had tuna and salmon sushi with ebi the other day, and it got me wondering why they taste like veggies?? I dont know how raw fish is even supposed to taste like :') it was quite delicious though.

Raw fish does taste “mineral-y” and I think that’s something that is similar with fresh vegetables. However, raw fish also has a pretty strong fat taste and savory taste which isn’t present in vegetables

A very common pairing in a sushi roll like this is:: cucumber and avocado + protein filling + seaweed wrap + rice and sesame + top layer proteins
The fish is more an accessory to the other components in the roll. Which are quite often fresh veggies.

The roll you have here has micro greens, seaweed (nori), and likely some veggies like cucumber in the middle of the roll.
If you liked it and plan to eat again, try ordering sashimi next time, just a raw cuts of fish. Then try nigiri (fish on sushi rice with a tiny dab of wasabi, can be ordered with no wasabi).
Each ingredient adds to complexity of the flavor, but can take away from some of the subtleties. Different fish have different flavors, so try things like ahi (yellowfin tuna), hamachi (yellowtail), salmon, saba (mackerel), etc and you will start to notice the differences from subtle and buttery to fishy.
Don’t skip out on Akami (red meat from bluefin tuna) , chutoro (medium fatty belly cut), and otoro (very fatty belly cut) which all have different flavor profiles and textures. Similar to different cuts of beef or pork.

You might want to try sashimi, that’s rice with sliced fish on top. Rolls with seaweed wrap or micro greens are more likely to be heavy on the veggie taste
