    I picked this recipe kind of randomly and I enjoyed it more than I thought I would. They were delicious and paired nicely with some chicken sausage on the side. I used the green French lentils from Whole Foods. I also couldn’t find turnips, so I used parsnips.

    I skipped the step to pick through the lentils for stones (thought I’d be relatively safe with the packaged ones), and holy moly, I was quicky punished for the decision. Literally on my first bite I almost cracked a tooth on one! It was a rough intro to homemade lentils, but I didn’t encounter any more stones after that, and I really liked the dish. Strongly advised not to skip this step!

    The lentil prep method that’s part of this recipe is the one I use all the time, it makes such insanely flavorful lentils. I use them in salads, even made some kind of weird but yummy lentil olive tomato pasta with them one time. Going to make a batch this weekend!
