RECIPE:

Maple Frosting β€”
* 1/2 cup diary free butter, softened
* 2 cups powdered sugar, sifted
* 2 tsp pumpkin pie spice
* 1 tsp vanilla extract
* 2 Tbsp maple syrup

Muffins β€”
* 1 3/4 cups all purpose flour
* 1 tsp baking soda* 1 tsp baking powder
* 1/2 tsp salt* 2 tsp cinnamon* 1 tsp ginger powder
* 1 tsp nutmeg
* 1 tsp pumpkin pie spice
* 1 tsp baking soda
* 1/2 cup organic sugar* 1/3 cup brown sugar, packed
* 1/4 cup oat milk
* 1/2 cup vegetable oil
* 2 flax eggs
* 1 1/2 cups pumpkin purΓ©e

  1. For frosting: beat butter until light and fluffy. Slowly add powdered sugar + pumpkin pie spice and incorporate.

  2. Add vanilla extract and maple syrup. Combine until smooth buttercream is formed.

  3. Wrap and refrigerate until ready to pipe.

  4. For muffins β€” preheat oven to 350F. Line a muffin tray with 12 cupcake liners.

  5. In a medium mixing bowl, add flour, baking soda + powder, salt, and spices. Whisk together and set aside.

  6. In another mixing bowl, add both sugars, milk, oil, flax eggs, and pumpkin purΓ©e. Whisk together until combined.

  7. Add flour mixture and mix to combine. Scoop into prepared liners.

  8. Bake for 20-25 minutes or until a toothpick can be inserted and come out clean. Remove and let cool completely.

  9. Once cool, decorate with maple buttercream then serve.
