    Maine lobster. That’s a spiny lobster, warm water species which has no claws and doesn’t taste as good.

    Many great suggestions. My take: add fresh dungeness lump crab with mustard aioli, cold water lobster claws and tails, caviar with crème fraiche and blini, mignonette and fresh grated horseradish for the oysters
