Okay! Now…for the level up… freeze about 75% of your vegetable scraps… Everything (in addition to onion and shallot peels) from herb stems to garlic skins, leek ends, carrot ends, potato peels, celery ends, mushroom stems, and so on. A Parmesan rind added is also clutch. Avoid bitter veggies like artichoke or broccoli. Save in a gallon freezer bag til full. Fill an instant pot or a large Dutch oven with the scraps, cover with water, add some seasonings- I like to add salt and pepper, garlic / onion powder, turmeric etc and pressure cook for an hour or low simmer for 4 on the stove. Strain. You will get about 9 cups of rich, dark brown veggie broth that can be used to start soups and so much more. The remaining pulp is great for composting.
