Update us later! How long are you letting it go? Personally I’d up the temp by at least 5 degrees for a ribeye especially bone-in.
Lesson learned. I’ll throw some venison loin in this year… beef steak, I feel like I just ended up grilling and, of course, ended up a little over

I never have the seal under water. I have these silicone coated magnets i put inside the water and outside the container that keeps the bag from sliding under water

Just wanted to pop in and say I have the same SV container, it’s been fantastic! Just a small tip, eventually the rubber “fringe” will break down and can flake off and jam your circulator. I eventually just trimmed mine off with a box cutter once it started breaking down. Still a great container though.
Also, the lid is great for clamping down gallon sized ziplocks.
