Make sure you try this deliciously creamy sundried tomato pasta. A jar of sun-dried tomatoes are such a convenient ingredient. And the secret weapon is using the oil from the jar for extra flavor. Heat up the oil and throw in some thinly sliced garlic and fresh thyme for a minute or so before adding in a whole bunch of chopped sundried tomatoes and chicken stock. Let that simmer and reduce for 5 minutes before blending as best you can and pouring in cream for that smooth, luxurious feel. Finish with some grated parmesan and then drop in your pasta of choice with a touch of pasta water for a simple but extremely satisfying meal. [Music]

1 tbsp Sun-dried Tomato Oil
3 Garlic Cloves, minced
1 tbsp Fresh Thyme, chopped
100-120g Sun-dried Tomatoes, chopped
200ml Chicken Stock
150ml Double Cream,
50g Grated Parmesan
Pasta of your choice, I prefer Linguine
Serve with more Parmesan and a few Basil leaves

I remember falling for the vodka pasta recipe hype and being so let down about how mediocre it was. Sun-dried tomatoes are superior, so I bet this is so much better.
I think it is crima to put cream in tomatoes for pasta.
Sundried tomato oil is one of my favourite things to use in the place of olive oil for a bread plate
