Looks like latte foam to me. A cortado with art is generally an indicator that it’s not a traditional cortado.

So Theory is near me, and I regularly use their Rude Boy (Wild Gift’s coffee actually) and it’s quite good. He usually sells it like two days off roast so I have to let it sit for a few days before I use it.
Mark, the owner, does a really great job. The trailer is permanently located and they actually own the lot. It’s been wonderful having it nearby.
Their offerings are excellent, but I will say that they are sometimes inconsistent. I’ve had really good espresso here but occasionally I’ve gotten an over extracted shot. They do a LOT of volume though, especially for a coffee trailer and they aren’t going to hit it out of the park every time.
All that said, this place is definitely coffee first. They are, in my opinion, one of the top shops in San Antonio. I definitely recommend a stop by if you’re in the area.
One of the good spots in SA. Hit up Wild Barley for a good bite near there too.
SA has a surprisingly good amount of third wave shops.
My current order (visit often, don’t live there): 1. Gold – always great, vibes are cool and just a cool good coffee spot. 2. Bright – only been once, but had good traditional coffee and unique drinks with Asian influence if you’re going with a non-coffee person. Plus you can hit up Blanco Cafe, local staple for quick, cheap and delicious Tex mex. 3. Indy – hit or miss, usually hit but also kinda the only third wave in that UTSA/Bandera area. 4. Merit – have grown so large, kinda like the Starbucks of third wave. Not amazing, but good for how large they’ve gotten.
Not an exhaustive list, but what I’ve enjoyed when I routinely visit. Shame Brown Coffee isn’t around, that was my favorite spot for years.
