On my Smokey Mountain there would certainly be air flow issues if I packed the racks that tight. I remember doing it and having trouble getting up to 250.

Update! I indeed was having an issue hitting 250. I had to do the unthinkable, pull a spare rib rack, and throw it on my gas grill.🤦
