Thank you all so much for all of your thoughtful and wonderful recipe suggestions for my absolute unit of a zucchini earlier! I shredded the whole thing and baked two loaves of bread. One with walnuts and one with peanut butter. I’m planning on also making fritters this week! I froze the rest into portion sized baggies to use for more bread and more fritters at a later date. Next season I’m going to be using many of the other suggestions like the boats!

    Chocolate zucchini bread is the bomb. Looks like you have enough left over. Getting your moisture level correct for breads is the tricky part.

  4. i always add walnuts, chocolate chips a ton of cinammon and allspice to my zuchini bread. tastes like christmas to me lol
