This is Mac and Cheese, the Italian way, with cauliflower and Gorgonzola PDO. The cauliflower slowly cooked in milk and paired with the cheese makes a perfect creamy sauce and healthier version of mac and cheese but without losing that cosy and comforting feeling. Instead of baking it in the oven to get the usual crust I made the most of the cauliflower by using the leaves to make a golden and crispy pangrattato to serve on top.

Let’s take your making cheese to the next level with cauliflower and goronola pio. Creamy, rich, and full of flavor. Add everything in a frying pan. The cauliflower, the milk, touch of salt, and black pepper. Cook it on a medium heat until the cauliflower get really nice and soft. In a blender, we’re going to make a super quick pangato. The leaves from the cauliflower, a bit of stale bread, and a bit of garlic. Cook it gently in a frying pan. touch of fresh time. Now that the cauliflower is fully cooked, we’re going to blitz it. Back inside the frying pan, we’re going to go with a cauliflower cream. And now it’s time for the king of blue cheese, gorgonola pio. It’s going to add a beautiful creamy, tangy flavor to our mac and cheese. Put it back on a medium heat. Add a touch of pasta water and let it melt. Once the pasta is cooked, it goes straight into the sauce. If you need to add a little bit more of the pasta water and give it a nice final stir. Look at that comforty creamy Italian mac and cheese. And to finish that beautiful crispy pangrat, this doesn’t just taste good. Gorgonzola pedio is an irresistible good mood food.

  4. Gorgonzola, absolutely, the pangrattato with the cauliflower leaves, amazing. Whizzed up cauliflower in the sauce… ruined it for me haha.

  8. That's not even make and cheese lol. There's like 5% cheese in this nonsense. That's macaroni in cauliflower sauce, with a hint of blue cheese. Calling this Mac and cheese is an insult to Mac and cheese. You couldn't pay me to eat this.

  9. I find that the cauliflower adds that extremely unpleasant sulfurous odor to anything when cooked like this. How do you get rid of that? Are you just overwhelming the sulfurous odor with the blue cheese odor?
