Recipe:

2 large onions

Garlic to hearts content

Red or green finger chilli to spice you want

Fresh ginger if you have or powder

Tumeric

Madras curry powder (or any curry powder)

Small amount of cinnamon

Cumin

2 tins of Sardines in tomato sauce

Coriander – cook stalks with the onions and garnish with leaves

Salt

Generous amount of oil for browning onions

  • Fry onions until golden and browning in oil. Then add in garlic, fresh ginger, chilli and coriander stalks – let soften

  • add in your spices and cook them off for a few mins adding water to stop sticking

  • add in the sardine in tomato sauce tins..gently stir if you want fish to keep shape but just as tasty if they break

  • add water and salt to taste

  • cover and let cook for around 10 mins or until thickened

  • top with coriander leaves
