Crispy Greek Style Potatoes with Tzatziki – recipe Below

This killer combo of golden crispy Greek style lemon potatoes and a classic tzatziki is just divine. The potatoes melt into the summer dip beautifully. The food was inspired by my recent trip to Greece and, I’m not going to lie, the combo by my fav Alfie Cooks whose potato salads have been popping online. Serves 4-6 as a side

750g baby new potatoes
4 tbsp olive oil, plus extra for drizzling
The juice of a lemon
3 cloves garlic, crushed
2 tsp yellow mustard
1 tsp dried oregano
1 cucumber
350g full fat Greek yogurt
1-2 tsp white wine vinegar
30g feta
A handful of roughly chopped mint leaves
Salt and pepper

1. Pre-heat the oven to 200c fan. Cut the potatoes, smaller ones in half and larger ones into quarters and pop them into a mixing bowl.
2. Whisk together 3 tbsp of olive oil, lemon, 2 cloves garlic, mustard, oregano and a pinch of salt and pepper. Pour over the potatoes and toss together. Transfer to a roasting tin and roast for 50-60 minutes or until lovely and crispy.
3. Meanwhile, grate the cucumber into a bowl with course side of the grater. Add some salt and toss together. Leave for 5 minutes and then squeeze out all the excess moisture. Place into a mixing bowl and the yogurt, remaining 1 clove garlic, 1tsp vinegar, remaining 1 tbsp olive oil and a pinch of salt. Stir together. Check the seasoning, adding salt to taste and an extra 1 tsp vinegar if needed.
4. To serve, dollop the yogurt onto a serving dish and top with the potatoes. Crumble over the feta and scatter over the mint. Drizzle over a little more oil if you fancy and then dive on in.

That heavenly clatter is the sound of two of my favorite dishes finally colliding together. Crispy lemon, Greek potatoes, and classic tatsiki. The combination’s insane. I’m not going to lie. The potatoes are doused in a garlicky lemon dressing, and then roasted off until super crispy. The tatsiki, perhaps one of the greatest dips ever, is made with grated cucumber, the finest Greek yogurt, garlic, a splash of vinegar, and some salt. Mixy mixy mixy served with some cheeky feta and a little mint, and you’re good to go. You are going to absolutely love them. Cheers.

  2. Normally, I hate potato salad because mayonnaise really grosses me out. But this looks so so good!!!
