That’s what making authentic Greek spanicopa is all about. It’s a classic mezz that combines fresh greens, rich cheese, and flaky pastry into one delicious bite. To start, you need fresh spinach, which should be washed thoroughly and chopped finely. Soautay the spinach with finely chopped onions like red onions, leaks, or spring onions in a good splash of olive oil until they soften. Once cooked, let the mixture cool a bit. Then mix in crumbled feta cheese, chopped fresh dill, and if you like, a little mint for extra flavor. Add beaten eggs to help hold everything together, and season with salt, black pepper, and a pinch of nutmeg. The filling should be creamy but not too wet. For the pastry, use good quality filo dough, which is thin and flaky. Before assembling, keep the sheets covered with a damp cloth so they don’t dry out. Brush each sheet generously with melted butter or olive oil to make the layers crispy and golden when baked.
