🍄 Ingredients (serves 1)

½ punnet mushrooms (mix of sliced & whole) 🍄
½ tbsp olive oil 🫒
½ jar @MrVikkis Garlic Pickle 🧄
1 chicken stock cube 🍗
A splash of water 💧
2 handfuls baby leaf spinach 🌿
2 heaped dessert spoon low-fat crème fraîche 🥄
Salt & pepper, to taste 🧂
Fine grating of parmesan 🧀

1 slice good bread, toasted & buttered 🍞🧈 (or serve over pasta 🍝)

🥘 Method

1. Heat the olive oil in a pan and fry the mushrooms until soft and golden.
2. Stir in the garlic pickle and crumble in the stock cube. Mix well.
3. Add a splash of water, then fold in the spinach until wilted.
4. Stir through the crème fraîche, season with salt and pepper, and simmer gently until the sauce thickens.
5. Serve over toasted, buttered bread or toss through cooked pasta. Finish with a fine grating of parmesan.
