So sometimes Sunday suppers can be as simple as like this 10 ingredient creamy zucchini pasta with seared stick on the side for a little protein. And because the peaches are so good right now and at this point I’m just trying to use up every last bit of summer inspiration before we transition into fall. I made this cornrow peach cobbler cake which is basically a twist on my classic peach cobbler. So I let my peaches slowly simmer which is the key to getting super juicy and sweet peach cobblers. Like the slower it cooks the better it’s going to be. In the meantime, I went to my garden for the last of my escalator zucchini and then basil and mint for the sauce, which we’ll be making later. After the peaches got super juicy, I swirled in my cornbread cake batter and then sent that to the oven to bake. Next up, I thinly sliced my zucchini, which this is going to help it get beautifully golden and crispy when we shallow fry them. I also seared some seasoned steaks because I’m just so weird when it comes to dinner. Like, I need some type of meat protein to be incorporated. And then for the sauce itself, I used half of the fried zucchini, lots of fresh basil and mint, grated parm, lemon juice, salt, and black pepper. Oh, and pasta water, which is going to help build out this beautifully like loose sauce without it separating. I mean, just look at this color. It is so gorgeous. And then I tossed in my al dente spaghetti and that creamy zucchini sauce and tossed with the remaining crispy zucchini slices, extra grated parm, and then sliced steak. And later, we enjoyed my cornmeal peach cobbler cake with some vanilla bean ice cream. And Sunday supper was served.
