Had about 3 lbs of trimmings from my last brisket. Ground them and mixed them with some ground chicken. Was inspired to use my wife's bundt cake tin to form the beast. Loosely followed an ATK meatloaf recipe. Smoked for around 2.5 hours at 300 degrees. Followed by a ketchup, vinegar and brown sugar glaze.

    A buddy of mine made a Bundt shaped meatloaf so he could microwave it. Apparently, it’s the optimum surface to mass ratio for an even ‘wave.
