
Ingredients
• 1 chicken breast (~180 g), cut into chunks
• 1 beef tomato (or 2 medium), chopped
• 1 small onion, diced
• 1 clove garlic, minced
• 1 red pepper, sliced (optional)
• 1 tbsp olives
• 50 g dry pearl barley (about ¼ cup)
• 1 tsp olive oil
• 100 ml chicken/veg stock (about ½ cup)
• Handful of fresh spinach (~50 g)
• Salt & pepper
Instructions
1. Rinse pearl barley, then simmer in salted water until just tender, ~25–30 min. Drain.
2. Meanwhile, heat oil in a pan. Season and sear chicken until golden (3–4 min). Remove.
3. In the same pan, cook onion, garlic, and pepper until softened (~5 min).
4. Add chopped tomato, cook down into a sauce (~5–6 min).
5. Return chicken, add stock + olives. Simmer gently 12 min until chicken cooked through.
6. Stir in drained barley and spinach, cook 1–2 min until spinach wilts.
7. Taste, season.
