That is fire. Start off with a bunch of chicken thighs, a pinch of salt, a bunch of black pepper, easy peasy stuff, some smoked paprika, bit of cumin, and then some fresh lemon. This lemon lemon in though like got four drops out of that, man. Mix. I’m only impressed by the size of this pan, man. Look at it. Can cook an entire family of four right in that pan. Some olive oil. Go in with the chicken thighs. We’re going to sear this off. Going to remove the chicken. Oh no, my lord. One committed. A splash more olive oil. Diced onion. Bunch of garlic. Keep cooking. And then you want onion to look a bit translucent like this. Some diced peppers and green beans. Didn’t see the green beans coming, did you? It’s a random one. A pinch salt, black pepper to some smoked paprika, some cumin powder, some turmeric. Now you’re supposed to add in saffron, bro. on a casual weekn night dinner. Are you insane? That’s not even biryani. Man, we’re just adding the turmeric instead. B. If you got a dollar for saffron, then you can buy saffron though. Mix some thin tomato, but not a bit. I mean, not a lot, just a bit. And mix. Go in with a pile of rice. Let that cook for a minute and let flavors happen. Basically, some frozen green peas. Go back in with all the chicken, vegetable stock. Give it one good stir. And then evenly spread everything out cuz after this we don’t want to touch it. You want a bit of crustation to happen at the bottom of it. Okay, let this simmer for about 15 20 minutes. Okay, I just got to show you something. It’s not done but the water’s running out. Add a bit more around the edges. You got to use your eyeballs, man. Okay, so you’re going to turn off the heat. Put this cloth on top. Leave it like this for 10 minutes with the heat off. some fresh parsley and then some lemon wedges. And this is it. Look how good that looks.

  4. I made my first couple of paella in the last month both turned out so well. Did with prawns fish and mussels. Used the saffron I bought on holiday in turkey πŸ˜‚
