Mashed Sweet Potatoes
*This recipe makes enough for 2-3 people. Double, triple the recipe, depending on how many servings you need.
Ingredients
3 large sweet potatoes (peeled, cut into quarters)
2 tablespoons of unsalted butter
1/2 teaspoon of sea salt
1/2 teaspoon of cinnamon
1/2 teaspoon of rosemary
1/4 cup heavy cream
1/8 cup dark corn or maple syrup
*If you do not have either, but have molasses and light corn syrup on hand, you can make it by using a ratio of one part molasses mixed with three parts light corn syrup.
Directions
Peel, chop and quarter raw sweet potatoes. Place into large sauce pot. Cover with enough water to cover your potatoes and boil until tender. You should be able to pierce them with a fork easily.
Drain the potatoes well and then in the same pot mash them with a masher really well.
Add in your butter, sea salt, rosemary and cinnamon. Mix well.
Stir in your heavy cream and syrup. Mix well.
This is a great side dish for chicken or fish. Just a hint of sweetness to compliment it nicely. Enjoy!
