  1. 24 hr dry brine followed by some time on the smoker. Rested in oven then finished over flame to 135 internal. What would you change. First time tomohawk and making a seasoned butter

    Choice/cut of meat = 10 out of 10

    Reverse sear in a pellet smoker = 10 out of 10

    Searing in the pellet smoker = 6 out of 10

    Seasoned butter = 10 out of 10

    The only thing I do different is I finish/sear my steaks over coals in my webber. I have tried searing in my pellet smoker and it will get the job done. But once I tried searing off a steak over hot coals, its no contest on which is better. Looks delicious. Well done!
