This is called Zathan. It’s a delicious bread with thigh, sumac, sesame seed, oregano, and so much more on the top. Look how delicious this bread is. Ooh, bis. Mom, can I have a bite? You know what this is missing? Hot chips and ln. Oh, I love that. Two cups of warm water. 1 tbsp of yeast. Mix well and let it sit for about 5 to 10 minutes. 4 and 1/2 cups of flour and a heaping tablespoon of salt. Mix it first. You can mix it by hand. Usually that’s what we do or when you open up my door with 1 tbsp of olive oil. Olive oil all around the rim of the cover it up and let it rise for about an hour and going to make them into dough balls. We’re going to let these rise for another 15 minutes. Add in about a/2 cup of zar. You can find this spice on Amazon or most Arabic stores. Adding in some corn oil. I’m going to use some olive oil. If you use all olive oil, it will literally burn it. So, after you’ve let this rise, go ahead and spread it out. And just spread the zed right on top. I put my pizza stone already in the oven. And I preheated my oven for 15 minutes at 450°. We’re going to put the zant up at the pizza stone and let it sit for about a good 10 to 15 minutes.

  1. Zaatar Bread (Manakeesh Style)

    Ingredients
    • 4 ½ cups all-purpose flour
    • 2 cups warm water
    • 1 tablespoon yeast
    • 1 teaspoon salt
    • 1 tablespoon olive oil (for dough)
    • 1 cup zaatar spice
    • ⅓ cup vegetable oil
    • ¼ cup olive oil
    • Extra vegetable oil (for your hands and greasing bowl)

    Instructions
    1. Activate yeast
    In a large bowl, combine the warm water and yeast. Let it sit for 5–10 minutes until it becomes foamy.
    2. Make the dough
    Add the flour and salt to the yeast mixture. Begin mixing by hand or with a stand mixer. As you knead, drizzle in 1 tablespoon of olive oil. Knead for 5–7 minutes until the dough is smooth and elastic.
    3. First rise
    Lightly oil the rim of the bowl, place the dough inside, cover with a warm towel, and let it rise in a warm area for 1 hour, or until doubled in size.
    4. Shape the dough
    Punch down the dough and divide it into equal-sized balls. Place them on a tray, cover, and let them rise again for 15–20 minutes.
    5. Prepare zaatar spread
    In a small bowl, mix the zaatar spice with ⅓ cup vegetable oil and ¼ cup olive oil. Set aside.
    6. Assemble
    Flatten each dough ball into a round disk. Spread the zaatar mixture evenly on top.
    7. Final rest
    Allow the topped dough rounds to rest for about 20 minutes in a warm area.
    8. Bake
    • If using a pizza stone: preheat the oven to 450°F, heating the stone for at least 15 minutes. Place the bread on the hot stone and bake for 10–15 minutes.
    • If using a baking tray: line the tray, place the dough rounds, and bake at 450°F for 10–15 minutes, or until golden brown.
    9. Serve
    Remove from oven and serve warm. Best enjoyed fresh with labneh, olives, or fresh vegetables.
