Hi it’s my first time baking a sourdough loaf! I’ve been loving my local sourdough bakery’s so I finally decided to try making it myself and I’m obsessed.

Recipe:

330g water
150g starter

500g King Arthur bread flour
10g Himalayan salt

Process:
Mix starter and water until milky
Add flour and salt
Mix until combined
Rest for an hour
First set of stretch and fold (8-12 stretches)
Wait 30 mins
second set of stretch and fold (4 stretches)
Wait 30 mins
Third set of stretch and folds (4 stretches)
Wait 30 mins
Last set of stretch and folds (4 stretches)
Let bulk ferment
Shape dough then refrigerate overnight

Baking:
Preheat Dutch oven at 450*
Place rice at bottom of pan, put dough on silicone mat and score, add to pan along with 2 ice cubes to create steam, cook for 45 mins then uncover at 400* and cook for 20-25 mins.

Any tips or tricks? Does it look okay to sell to family/friends?

    WOw if that’s really your first loaf, that’s…kind of unbelievable.

    Is it sales worth? I’d say yes. In less sophisticated places this would be at the mid to high end of the market. In sophisticated markets this would be somewhat low, mostly due to the uneven surface and the moderate underbaking of the crust. But the crumb look excellent, well proofed and hydrated.

    Looks really good especially for a first loaf. I’d definitely buy that.
    How did it taste? Was it dry at all? Most recipes I have been doing like this, are 20 minutes at 450 covered and uncovered for 15 – 20 minutes, so I’m just curious what your result were if an extra 20 minutes of cook time.

    A question about your Starter, usually I take 10g of the starter and add 30g flour and 30g water and let it there for one day. On the next day I prepare the dough. Did you really take that much starter? Does it not make the bread that sour?
