Recipe: Lemon Blueberry Blender Oats
Serves: 1
Ingredients
• 1 Tbsp chia seeds
• 2 Tbsp water
• ½ cup old-fashioned oats (gluten-free if needed)
• ½ banana
• 1 tsp lemon zest
• 1 Tbsp lemon juice
• ¼ cup almond milk (or milk of choice)
• 1 Tbsp maple syrup
• 1 Tbsp flax meal (optional)
• ½ tsp cinnamon
• ½ tsp baking powder
• ⅛ cup blueberries
• 1 Tbsp Greek yogurt (2% or non-dairy alternative)
Instructions
1. Prep the chia egg: Combine chia seeds and water in a small cup, whisk, and set aside for 10–15 minutes until gelled.
2. Preheat oven to 350°F (175°C) and grease an 8-oz ramekin.
3. Blend: In a blender, add oats, banana, lemon zest, lemon juice, almond milk, maple syrup, flax meal (if using), cinnamon, baking powder, and chia egg. Blend until smooth.
4. Bake: Pour into prepared ramekin, fold in blueberries, and bake for 25 minutes.
5. Cool & Top: Let cool 5–10 minutes before topping with Greek yogurt.
