Crispy Chicken Waffle

INGREDIENTS
Boiled chicken breast – 500 grams
Eggs – 2
Parmesan cheese – 35 grams
Salt – 1 teaspoon
Black pepper – 1/4 teaspoon
Mayonnaise – 80 grams
Mustard sauce – 1 tablespoon
Pickled jalapeño – 1 tablespoon
Lettuce – 10 grams
Onions – 60 grams
Pickled cucumber – 80 grams

PREPARATION
1. Place 500 grams boiled chicken breast on a cutting board and shred it with a fork.
2. Transfer the shredded chicken to a bowl. Add 2 eggs, 35 grams parmesan cheese, 1 teaspoon salt, and 1/4 teaspoon black pepper. Mix well to combine.
3. Preheat the waffle maker. Transfer the chicken mixture onto the waffle maker and close it. Cook for 10 – 12 minutes or until cooked through.
4. Once cooked, remove from the waffle maker and keep aside.
5. In a bowl, add 80 grams mayonnaise, 1 tablespoon mustard sauce, and 1 tablespoon pickled jalapeño. Mix well to combine.
6. Place the chicken waffle on a board, add lettuce, onions, and pickled cucumber on top. Drizzle with the prepared sauce and cover with another waffle.
7. Serve immediately.
