To make this:
Brown/pan fry: Chunk steak / mushrooms / onions and set aside
Microwave (1 -2 minutes ea) the rest of your vegetables, then pan fry to caramelize them. Potatoes take a little longer.
Make your sauce: Mix gravy with enough water to cover everything. Throw everything together to simmer. Add in Guinness and Worcestershire sauce. Optionally, add fresh thyme and rosemary.
This is very nontraditional method, but how I prefer. There are plenty of Guinness stew recipes out there if you prefer doing it a different way.
I used a combination of turnips and potatoes instead of all potatoes because turnips are lower calorie.
To get your sauce really dark you can add a touch of soy sauce for color.
Guinness is only 125 cal per can but packs a lot of flavor so you can add more if that’s your taste.
Wow that sounds really good! I appreciate a non traditional method, it’s not like we’re simmering tough old mutton! This recipe looks like it comes together easily and is comforting and delicious!
Now that is playing my song! LOVE me some veganised classics.
