Freshly baked, golden, and topped with creamy frosting… these cinnamon rolls are pure perfection!
Ingredients:
Dough:
200 ml (¾ cup + 1 tbsp) lukewarm milk
70 g (⅓ cup) sugar
2 tsp active dry yeast
60 g (¼ cup) melted butter
1 large egg
1 tsp vanilla extract
450 g (3 ½ cups) all-purpose flour
½ tsp salt
Cinnamon Filling:
100 g (7 tbsp) butter, softened
120 g (½ cup + 2 tbsp) brown sugar
2 tsp cinnamon
1 tsp vanilla extract
Optional
120 ml (½ cup) heavy cream (for pouring over the rolls before baking)
Cream Cheese Frosting:
100 g (3.5 oz / ½ cup) cream cheese, softened
50 g (3 ½ tbsp) butter, softened
70 g (½ cup + 2 tbsp) powdered sugar
1 tsp vanilla extract
Instructions:
1️⃣ Prepare the dough:
In a large bowl, whisk together the lukewarm milk, sugar, and yeast. Add melted butter, egg, and vanilla, then mix again. Stir in the flour and salt until a dough forms. Knead by hand for 4–5 minutes until smooth and soft.
2️⃣ First rise:
Place the dough in a lightly greased bowl, cover it, and let it rise in a warm place for 45–60 minutes, or until it has doubled in size. (*See the notes)
3️⃣ Make the filling:
In a small bowl, mix softened butter, brown sugar, cinnamon, and vanilla until smooth.
4️⃣ Shape the rolls:
Roll the dough out on a lightly floured surface into a rectangle. Spread the filling evenly over the dough.
Use a pizza cutter to cut it into 6 strips, each about 6 cm wide, for bakery-style rolls (or 12 smaller rolls for a shareable size). Roll up each strip tightly to form individual cinnamon rolls
5️⃣ Second rise:
Place the rolls in a greased butter or parchment-lined baking dish. Leaving some space between them so they have room to expand during the second rise. Cover and let rise again in a warm place for 45–60 minutes
6️⃣ Bake:
Preheat the oven to 350°F (180°C). Pour heavy cream evenly over the rolls (optional, see note), then bake the rolls in a preheated oven at 350°F (180°C) for 20–25 minutes, or until golden brown.
7️⃣ Frosting:
Mix or beat together the cream cheese, butter, powdered sugar, and vanilla until smooth and creamy. Once the rolls have cooled slightly, spread the frosting on top.

*Notes :
Pouring heavy cream over the rolls before baking is optional. It makes the bottoms extra soft, gooey, and rich. If you like a lighter texture, you can skip this step.
If your kitchen is cool, you can create a warm place for the dough to rise by placing the covered bowl in your oven Just heat your oven to 100°F (40°C) for 1–2 minutes, then turn it off and place the dough inside with the door slightly open.
