8 oz cream cheese
¾ cup whipped cottage cheese
¼ cup light mayo
14oz can of artichokes, drained of excess water and chopped
½ cup frozen spinach, drained of excess water and chopped, (can also use 2 handfuls of fresh
spinach, chopped)
1 shallot, minced
2 cloves garlic
½ tsp red chili flakes
¼ tsp each of salt, onion powder, and pepper
1 cup mozzarella
¼ – ½ cup of parmesan cheese
Even creamier version:
Keep everything the same but remove the cottage cheese and use ½ cup of mayo and ½ cup of
sour cream!
BAKE 350 for 15-20 minutes broil for 3 minutes. If you make ahead and freeze, move to the
fridge to thaw for 4-6 hours or at room temp for 1-2 hours before baking.
Easy, cheesy, and delicious, this spinach artich choke dip will be a crowd-pleaser for your next big game. To make it, all you have to do is chop up one can of artich chokes, some spinach, shallots, garlic, and let that cook down with some seasonings. Now, I’m making a lightened up version that still packs all the flavor with whipped cottage cheese, cream cheese, light mayo, and then mozzarella, and parmesan. Once everything is well combined, you’re going to add it to a greased baking dish.
