Easy Eats Crispy Zucchini Fries
I’m not gonna try and lie to you and tell you that these baked zucchini fries are better than French fries, cause they’re not.
But I feel way better about myself finishing off this tray of zucchini fries than regular fries. It’s a simple recipe that produces plenty of flavor and crunch.
And honestly I don’t know if they are actually healthy or not, but they’re for sure delicious.
The magic here is in the coating. You get a serious crunch from the panko, followed by that savory, salty kick from the Parmesan and garlic.
It’s a simple combination that creates a seriously satisfying snack. They’re the perfect vehicle for my artichoke aioli, making them feel like a restaurant-quality treat you can easily make at home.
Easy Eats Crispy Zucchini Fries
Ingredients:
2 medium zucchinis,cut into fries
1/2 cup all-purpose flour
2 large eggs,beaten
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and black pepper,to taste
Method:
1. Preheat oven to 425°F. Prepare a baking sheet with parchment paper.
2. Create your coating stations: one bowl with flour, one with beaten eggs, and one with panko, Parmesan, garlic powder, paprika, salt, and pepper combined.
3. Coat each zucchini fry by dipping first in flour, then egg, then the panko mixture, pressing gently to adhere.
4. Arrange fries in a single layer on the baking sheet. Lightly spray with olive oil.
5. Bake for 20-25 minutes, flipping halfway, until golden and crisp.
6. Serve immediately with my artichoke aioli for an easy, restaurant-quality snack.
Easy Eats Tips: For even cooking, cut zucchini into uniform sizes. Ensure your oven is fully preheated and avoid overcrowding the pan for the crispiest results.
I’m not going to sit here and lie to you and try to tell you that these baked zucchini fries are way better than French fries because let’s be honest, they’re not. If you’re trying to eat semi-healthy or at least trick your mind and body into thinking you’re eating healthy, then you can’t go wrong with this recipe. They’re crunchy, they’re light and delicious, and this artichoke ioli could make a turd taste good. Take a couple of zucchinis and quarter them. And the key to keeping these crispy is you want to remove all those seeds from the middle. That’s where most of the moisture is. You want to keep them as dry as possible. Slice them up to the size of fries. Get your breading station set up with some flour, some egg wash, and then your breadcrumbs of parmesan and seasoning. Get those breaded up and onto a sheet pan. Spray with a little bit of olive oil and into the oven at 425. After about 20 minutes, they’re going to come out nice and golden brown. And trust me, they are crispy and crunchy. And honestly, I don’t know if these are healthy or not. I just like good food. But I feel way better about myself eating this whole sheet pan than I would about French fries.
