Strawberry Shortcake Layer Cake
Ingredients
For the Cake
2 cups all-purpose flour (or gluten-free 1:1 blend if needed)
2 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup unsalted butter, softened
1 cup sugar
2 large eggs
1 tsp vanilla extract
1 cup buttermilk
For the Strawberries
1 ½ lbs fresh strawberries, hulled & sliced
3–4 tbsp sugar (adjust for sweetness)
1 tsp lemon juice (brightens flavor)
For the Cream
2 cups heavy cream, very cold
¼ cup powdered sugar
1 tsp vanilla extract
Optional Simple Syrup
½ cup water
½ cup sugar
1 tsp vanilla (or a splash of strawberry jam stirred in for fun)
Method
1. Prepare the Strawberries
Toss sliced strawberries with sugar and lemon juice.
Let them macerate at least 30 minutes to get juicy.
2. Bake the Cake
Preheat oven to 350°F. Grease and line a 9- or 10-inch springform pan.
Whisk flour, baking powder, soda, and salt.
In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
Alternate adding dry mix and buttermilk until just combined.
Bake 30–35 minutes until a toothpick comes out clean. Cool completely.
3. Make the Syrup (optional but great for keeping moist)
Heat water and sugar until dissolved. Stir in vanilla. Cool.
4. Whip the Cream
Beat heavy cream, powdered sugar, and vanilla until “soft peaks” form.
5. Assemble
Slice cooled cake horizontally into 2 layers.
Brush each cut side lightly with syrup.
Spread a layer of whipped cream and then a layer of macerated strawberries over the bottom half.
Top with second cake layer.
Cover the whole cake with whipped cream, using an offset spatula; and pile strawberries on top!

[Music] Now that it’s dissolved, we put in the strawberry jam. [Music] Next, we need to make the cream and 1/4 cup powdered sugar. And now we add in two cups of really cold heavy cream. Add a teaspoon of vanilla extract [Music] and mix. Mix until soft peaks form. [Music] Then take the cake out of the oven and let it cool completely and slice it in half. Brush each cut side lightly with syrup. Spread the whipped cream on the bottom half of the cake. And then I top it off with the mashing and strawberries. [Music] Now top it off with the top layer. Cover the whole cake with whipped cream and top it off with strawberries again. [Music] Now we’re going to top it off with strawberries. M and then we’re done. Yum, yum, yum.
