I’m still new to this smoking thing. Did I make the right call by wrapping the pork butt? I’ve been playing around with my Big Green Egg more lately, and I wanted to take on the challenge of smoking a pork butt. I’ve seen countless online tutorials, but a lot of them don’t mention a crucial step I’ve learned from smoking ribs: THE STEAM WRAP. I had to know if this method would work its magic on a pork butt, so I decided to do a side-by-side comparison, wrapping one and leaving the other unwrapped.

the wrapped pork butt was significantly more tender and juicy, and both had that same delicious smoke flavor. I used the pulled pork to make some quick and easy BBQ sliders for a get-together with friends, but there are so many other ways to use this versatile meat.

So, this is kind of new territory for me, but I’ve never smoked a pork butt before. Let’s give it a try. [Music] All right. So, I’ve got two different ones. I don’t really quite know which ways we’re ready to go. I wrapped one, let it steam for the last 2 hours, and I got one. I think this is what you’re supposed to do. Ooh, that’s a lot of juice. This is definitely the winning one. If I get a bigger bowl, just chop this off in this. It’s good. It’s soft, comes hard just like butter. I don’t know if that’s the right way to describe it or not, but two out of two right there.
