I dont know why, but it just works.
The sweetness of the jam kind of neutralizes the spice of the onion, so youre kinda just left with a sweet pickled onion flavor. Feta is just feta and it taste great with most things.
Just Himalayan salt and ground pepper to season. I promise the pepper is needed and doesnt ruin it

I like ketchup with my eggs, which is kinda similar to jam because of the sweetness…and I put jam on my French toast, which is bread with eggs…so not too different from what you’re doing! I love red onion…I think I would like it because of the crispy texture and the bit of a kick! 😋👍

Had a mate in college who wanted bread and jam, but also an egg so the easiest way for her was to make a sandwich, washed off with a drink of Milo thicker than cream.
