I couldn't be bothered to go out and get pork belly, so I used bacon and slightly burned it, the mandolin made the cabbage too fine (I was hoping to get a little crunch every few mouthfuls, alas), and I probably could have used a little bit more cabbage too.

But it was delicious and those are just things to bear in mind next time!

    It looks delicious anyway, but yeah as a traditional okonomiyaki it looks a bit too cakey/pancakey. Traditional okonomiyaki uses way, way more cabbage than batter, the portion of batter you need is actually really small. Try it that way next time!

    Okonomiyaki looks beautiful and delicious. I’m sure with the knowledge you gained next time will be even better but I must say I would be lying if I said I wouldn’t cut it in half and start munching on at least half of it while guarding the other half with my life.

    We Japanese make it with bacon all the time lol it’s “Okonomi” literally means however you like. So all good !!!!

    I’m from Osaka but I love cabbage to be extra chunky so I just use a knife to cut it. If you want more Osaka ghetto flavor, add green onion and red ginger (benishouga) in the mix, then if you are extra Osaka ghetto, add buttload of tenkasu (fried tempura butter bits) on top for extra crunchiness!!!
