still at it with tomatoes. And today we’re talking about brusqueta because I wanted to tell you how to say brusqueta. Just like that, brusqueta. You’re going to take bread of your choice. We’ll go over all of this in the blog post that I’m preparing for you. You’re going to toast the bread, whichever way you like. I love doing it, into a cast iron pan. It gives it a smoky flavor. Then you’re going to take your ripest tomato. And this is one way to make brusceta. It is to squish a very ripe tomato right on top of the bread. You’re going to chifod your basil. If you’re Italian, you wouldn’t do that. You’d rip the basil with your hands. You can add garlic to the bread if you like, but I just like it plain. Squish the tomato right on the bread so the juices get in there. Flip it over. Top it with your slices of basil. Then you’re going to drizzle it with a little bit of the best quality olive oil you can find. Sprinkle some salt. I have my homemade tomato salt.
