Hi all, I get my meat from a local ethnic market and they sometimes weirdly label meats.

My mom got this steak from them and I’m not sure what the cut is. I’m thinking chuck steak?

The label reads “Beef chicken steak”. Confusing I know.

    Top blade steak Without the middle grisle removed. If they did they would be flat iron steaks.

    top blade steak, chicken steak is used a lot because it is pounded, and battered and fried like boneless chicken would at times.

    Top (chuck) blade steaks not flat iron. Flat iron comes from the same primal but requires cutting in a different direction to avoid the griddle in the middle which is hard to chew. The rest are tender. Doesnt look like good marbling for this cut. Maybe a choice. Best cooked to medium rare. Just avoid the griddle while eating if it is too hard to chew for you.
    This is my favorite cut just for the shear cheapness, great relative marbling, and easiness to cut into steaks.

    not sure what others are saying, but as soon as i seen it i knew its a chicken steak, i only ever had one butcher get them for me and they are gone. that is what they called them.

    when i first got turned onto them they were cheap AF, i’d get a dozen for less than 10 bucks, thats 25 years ago, butcher told me how to cook them, bbq and dont leave them long, the usual seasonings and make cheese steaks out of them.

    havent seen one in a long time until tonight
