I made a super easy and delicious salad last night with some grilled mushrooms. First, you want to make sure that your mushrooms are about that size. Throw them into the pan. Start grilling them up like so. Add your seasonings and then put them to the side. In that same pan, for my salad at least, I added some onions, some carrots, and some garlic. I grilled it and I assembled it. The base was spinach, and then I added some tomatoes as well. Um, my man didn’t want anything grilled besides the mushrooms, so he had raw onions, raw garlic, tomatoes, etc. For the dressing, I kept it simple and added lime and olive oil, and then just mix that really well. To mine, I added a whole bunch of different seasonings like salt, pepper, paprika, oregano, things like that. It’s always good to have something refreshing, especially when most of the week I’m eating a little bit heavier.
