A sweet-and-savory roasted pepper salad that’s fresh, garlicky, and perfect as a side dish or appetizer.
Ingredients
* 6 red bell peppers
* 1 handful fresh dill (chopped)
* 1 handful fresh parsley (chopped)
* 4–5 garlic cloves (chopped)
* 1 tbsp sugar
* 1 tsp salt
* ½ tsp black pepper
* 2 tbsp vinegar
* 2 tbsp olive oil
Instructions
1. Roast the PeppersPreheat oven to 350°F (175°C). Place the red bell peppers on a baking sheet and bake for 25–30 minutes, turning halfway through, until the skins are blistered and the peppers are soft.
2. Steam & PeelTransfer the hot peppers to a large bowl, cover with a lid or plastic wrap, and let them sit for 15 minutes. This helps loosen the skin.Peel off the skins once cool enough to handle.
3. Slice & SeasonSlice the peeled peppers into strips and place them in a bowl. Add the chopped dill, parsley, garlic, sugar, salt, and black pepper.
4. Dress & ServeDrizzle with vinegar and olive oil. Toss gently to combine.Serve at room temperature or slightly chilled.
