For the Shopska Salad:
– 1 red pepper
– 1 green pepper
– 1 hot pepper, chilli (to taste)
– 1 cucumber
– 3–4 scallions (spring onions)
– salt, to taste
– 2–3 tbsp sunflower oil
– 1–2 tbsp apple cider vinegar
– 100–150 g salty white cheese (feta-style), served on the side
For the “Taco” Bread:
– 4 slices of rustic bread, thinly cut
– 2 eggs
– 2 tbsp milk
– a pinch of salt
– 2–3 tbsp pork lard (for frying)
Instructions
– dice the red, green, and hot peppers.
– peel and chop the cucumber into small cubes.
– finely slice the scallions.
– toss everything in a bowl with salt, sunflower oil, and apple cider vinegar.
– keep the salty cheese in a separate small dish for serving.
– in a shallow bowl, whisk together eggs, milk, and a pinch of salt.
– briefly dip each bread slice into the mixture, coating both sides.
– heat pork lard in a skillet over medium heat.
-fry the bread until golden brown and crisp on both sides. Drain on paper towel if needed.
