New here since I got an old hand crank ice cream churn for my birthday. I decided to make a childhood favorite that a store near where I grew up at sold. Turned out really well and figured I'd share!

To give credit where credit is due, I used u/sweetlo123’s recipe and tweaked it to work for me.
Ingredients (1 gallon yield):
4 cups of milk
4 cups of heavy cream
1/2 cup non-fat dry milk powder
1 2/3 cups white sugar
1 1/4 teaspoon salt
2 teaspoons vanilla extract
8 Egg yolks
1-2 cups of hot chocolate powder
Crushed peppermints (soft kind, I think they are called buttermints)
Instructions:
Mix milk, heavy cream, milk powder, white sugar, and salt in a large pot. Heat to a light simmer. While waiting for the mixture to heat, separate 8 egg yolks into a mixing bowl and whisk. As soon as your dairy mixture begins simmering, remove it from heat and slowly pour it into the bowl with the yolks while whisking them together (I used a kitchen aid mixer to whisk while I poured). Once fully mixed, return the mixture to the pot and heat to 175º. It’s important to monitor this closely and not go over the 175º mark. Remove the pot from heat, pour through a mesh strainer, and chill the mixture over night in the fridge.
The next day, churn into ice-cream and add the hot coco powder and peppermints. I like mine with a strong coco flavor, so I added quite a bit, so just add enough to your taste. Pour the mix into a container and freeze overnight.
