Today’s breakfast was perfect for our first cooler day of the season. Plus it felt so indulgent and comforting. The pancake has a soufflé like texture and could easily be adapted for other flavors.
Apple Pie Pancake: 279 calories / 17g protein / 5g fiber
Pumpkin Spice Latte: 175 calories / 24g protein / 1g fiber

Finely dice apple, mix with sugar substitute of choice, apple pie spice (measure with your heart) and a splash of lemon juice. Cook until apples are softened (15 minutes on the stove or 4-5 minutes in the microwave).
Lightly mix pancake mix, whipped cottage cheese, egg whites and sugar free pancake syrup. Then fold in half of apple mixture. Cook until set in the center (20-25 minutes @ 325* or 6 minutes at 50% power in the microwave).
Top pancake with rest of apple mixture, whipped cream (or Greek yogurt) and a sprinkle of cinnamon.
Bonus: Pumpkin spice latte! Mix pumpkin puree, pumpkin spice syrup, milk of choice, then heat and froth. Add 2 shots of espresso. Top with cold foam or whipped cream and sprinkle of pumpkin spice blend.
